My Aunty Jan passed this amazing recipe on to me. It serves 4. Each slice only has about 200 calories. It's also the perfect college student food because it equals four very healthy dinners! Enjoy!
Preheat oven to 350 degrees F.
Mix together:
1 package frozen chopped drained spinach (or 1-3 cups chopped fresh spinach)
1 package feta cheese
1/2 - 1 package mozzarella (I use about a 2'' by 3'' by 1/2'' piece)
4 eggs
2 tablespoons flour
1/2 tsp pepper
1 tsp oil
You can also add:
2-3 mushrooms, diced
1/4 cup finely chopped broccoli
1/2 white onion, pre-sauteed and diced (very important to cook the onion before adding it to the mix)
2-3 green onions, chopped
Mix well and throw everything in an oiled pie pan and bake for 45-60 mins. Delicious!!
