I like to make this pie for Thanksgiving and Christmas. It's a little healthier than some other treats, yet still delicious and very savory. Great for even the pickiest of eaters.
Preheat your oven to 450 degrees F.
Make one standard pastry recipe (enough for a crust and a lid):
1 1/2 c flour
1/2 tsp salt
1/2 tsp baking powder
1/2 cup butter (washed between hands under cold tap water until it becomes malleable like playdough)
Knead all the above together, adding 1/3 cup ice cold water gradually (all water may not be needed) until the dough can be rolled but is not too sticky. Flour a surface and rolling pin, and roll out half the dough for a crust, about 1/4 cm thick. If you don't have a rolling pin use a wine bottle, or pound it flat with your hands and shape to the pie pan.
Filling:
About 4-6 apples, peeled, cored, and diced
1/2 - 2/3 cup brown sugar
2 tsp cinnamon
1 1/2 tsp nutmeg
1 1/2 tsp cloves
1/8 tsp salt
1/4 cup oil
zest of one lemon
2 tbsp lemon or orange juice
Mix all together and dump into pie crust. Roll out the remaining pie dough and cut into long strips to make a lattice top. Simply layer one way, reroll dough and cut again, then layer strips the other way. Dust with cinnamon if desired.
Bake for 10 mins at 450 F, then lower temperature to 350 F and bake for another 20-35 minutes. Let stand for half an hour before serving or the pie will be runny when you try to cut it. Enjoy!!
